And to top it all off- the perfect supper. Heuvos Rancheros. Refried homemade pintos, dos huevos from my hens, one string cheese shredded (the only cheese in the house) with pico de gallo (rooster's beak), or as they call it in Cozumel, ixnepec, (dog snout)
made from tomatoes, jalapenos, garlic, onions, cilantro and lime juice.
With corn tortillas.
Si. Muy bueno.
And now I'm cleaning up and going to bed. I crave sleep like a sponge craves water.
