The river is flat this morning, like a mirror.
It rained last night.
For all of you who have never had mullet- sorry for you. If you catch it and eat it right then, it is the sweetest white meat of fish you ever had. I soaked it in buttermilk with hot sauce, then rolled it in panko and flour and salt and pepper and fried it in a pan.
It was heaven.
If you let mullet sit though, the oil in it turns. This is the good kind of oil, and mullet is chock full of it. Fish oil. Mullet was thought of as trash fish for many years and if you don't eat it right away, it is.
But oh. If you catch it and throw it in the pan...
Also, you can smoke it.
And then that's another sort of perfect.
Well. I am still waking up. It is our anniversary day. I think we are going to drive around and maybe up to Vero. Check out the beach. Mr. Moon says he would get a pedicure with me.

Don't worry. As we speak he is playing online poker and watching the hunting channel. So...a pedicure?
We shall see.

Yep, that's what I thought about mullet. From the water, right to the pan. We seldom kill any fish now but mullet are everywhere. Enjoy the day. Happy Anniversary to you both.

ReplyDeleteI've been trying to get my husband to go for a pedicure because his callouses have ripped up at least 3 sets of sheets this year.
ReplyDeleteOK now I'm wanting some fried mullet! One of my favorite memories as a child are of standing on the beach waiting for my granddaddy to come out of the water with his cast net and then picking up the mullet he caught and throwing them in an old zinc tub.
