And to top it all off- the perfect supper. Heuvos Rancheros. Refried homemade pintos, dos huevos from my hens, one string cheese shredded (the only cheese in the house) with pico de gallo (rooster's beak), or as they call it in Cozumel,
ixnepec, (dog snout) made from tomatoes, jalapenos, garlic, onions, cilantro and lime juice.
With corn tortillas.
Si. Muy bueno.
And now I'm cleaning up and going to bed. I crave sleep like a sponge craves water.

ReplyDeleteI crave sleep, too. I can sleep for inordinate amounts of time. I sometimes cry when I have to get up.
